Lupines are one of the most complete foods that exist, and due to the fact that their ingredients have a protein content of almost 40%, they are an ideal breeding ground for micro-organisms. For this reason, they are difficult to conserve, and even manufacturers who use a high percentage of preservatives experience problems in conserving the product.
The proteins found in lupines have practically no taste or odour in their natural state, but they do absorb other odours or tastes, which they rapidly add to their molecular structure.
